Mycoprotein is one fungus, grown and dried. Sold as Quorn since 1985, it's the body of Fusarium venenatum, grown in a tank, heat-treated, and bound into mince, pieces, sausages, and nuggets. Its cell wall carries a fungal fibre, beta-glucan, that meat and ordinary plant proteins don't. It drags bile acids out in the stool; the liver rebuilds bile from cholesterol, so LDL drops. The same fibre flattens blood-sugar and insulin curves after eating, and taking meat off the plate cuts saturated fat at the same time.
The protein is complete, and the cholesterol drop is the most replicated finding in the meat-swap literature. All nine essential amino acids, absorbed about as well as milk; on the standard quality scores it sits next to milk and egg, ahead of beef, chicken, soy, and pea. LDL fell 10% over four weeks in overweight adults swapping at home 1, 12% in men trading 240 g/day of red meat for it 2, and 13% in the original 1992 trial 3. A meal built on it stimulates muscle growth better than milk protein gram for gram 4. And insulin runs lower after a mycoprotein lunch, with people eating about 10% less at the next meal without being told to 5.
Map the swap onto a meal you already cook.
Different effects on different clocks. The afternoon after a mycoprotein lunch runs flatter, with less of a 3pm slump, from the first meal, though you only notice if you're watching 5. LDL moves over two to four weeks, around 10%, larger if your starting number is higher 1. Over years, three swaps a week sit upstream of the cardiovascular curve the same way a statin's LDL drop does: weaker per point, but free and compounding, and it never went on a chart or needed a follow-up appointment.
The fine print — when to skip it, and what people get wrong
Allergy risk, unique among meat swaps. Mycoprotein occasionally triggers reactions, sometimes only after weeks of eating it fine. Stop on the first signal (hives, mouth or throat swelling, sudden GI distress within an hour); 60% who kept eating kept reacting 6. Mould, yeast, or Candida allergy raises the risk 7.
Not the same as a Beyond or Impossible burger. Those reassemble isolated pea protein and twenty-odd ingredients; mycoprotein is one organism's whole biomass, closer to tofu, and the trials show benefit when it displaces meat 8.

Mycoprotein (Quorn)
Quorn retails around $5–7 per 12 oz pack (~$0.45/oz), roughly 1.5–2× tofu but typically at or near the price of the chicken / mince it replaces. A few-meals-a-week swap is cost-neutral for many shoppers, slight premium for some.
Mycoprotein products are pre-cooked and used like meat in the same recipes; the entire effort is a one-aisle change in the grocery routine. No protocol, no timing, no preparation difference.
Three independent RCTs (Turnbull 1992, Mycomeat / Farsi 2023a, Pavis 2024) replicate a 10–13% LDL reduction when mycoprotein displaces meat — LDL being the most-studied modifiable cardiovascular risk factor with established hazard-ratio reductions on long-term outcomes. Plus a microbiome shift toward butyrate-producing Bacteroides and Roseburia (Farsi 2023b).
Multiple converging RCTs and a 2023 meta-analysis (Cherta-Murillo 2023) on cholesterol; three Exeter trials on muscle protein synthesis (Monteyne 2020, 2021); allergy dossier from a 1,752-report case series (Jacobson 2018). All chronic trials remain small (n=20–72) and short (≤4 weeks); no hard-endpoint cardiovascular outcome data yet.
Postprandial insulin AUC down 8–21% dose-dependently vs an isocaloric chicken meal (Bottin 2016); next-meal energy intake down ~10%; faecal SCFA up within 14 days (Farsi 2023b). Small but real changes in how a protein-dense meal feels and what follows it.
Lowering LDL by ~10% on a regular meat swap (Pavis 2024) modestly slows the accumulation of visible lipid-deposition markers (corneal arcus, xanthelasma) and the dull-skin / microbiome axis associated with red-meat-heavy diets — small and slow, not the headline benefit.
Indirect: lower postprandial glucose / insulin excursions blunt the afternoon energy dip after a protein-dense lunch (Bottin 2016; Cherta-Murillo 2025). Real but mild and downstream of glycaemic effects.
Indirect, via the same flatter postprandial glycaemia (Bottin 2016). Not measured as a direct cognitive endpoint in any mycoprotein trial.
