The culprit is one protein variant. About half the beta-casein in modern cow milk is the A1 form. Digested, A1 sheds a fragment called beta-casomorphin-7 that slows the bowel and irritates the gut wall in some people 1. Goat and sheep milk are essentially pure A2, so the peptide never forms 23. This is dairy chemistry, not marketing.
Sheep milk also carries roughly double the fat, protein, and calcium of cow per glass, so a small wedge of sheep cheese does more nutritional work than the same volume of cow 4. The extra fat is largely saturated.
The swap has been tested cleanly. Adults who say cow milk disagrees with them, screened to exclude the lactose-intolerant, got A1-free and standard milk blind and in random order. Two crossover trials of that shape found less bloating, less abdominal pain, and steadier stools on the A1-free arm, all inside two weeks 56. Goat and sheep milk are A1-free by default, the same mechanism through a different animal. Beyond digestion the evidence thins: no long trial has put goat or sheep dairy against cow on heart, bone, or lifespan.
Run it as a two-to-four-week test. That's the window the trials used, and it's long enough to know.
When the swap fits you, the change is fast and quiet. Inside the first week, the bowl of cereal stops sitting like a weight. By week two, the afternoon you'd written off as the work being hard turns out to have been the morning's milk, and the cheese course is back without consequence. It isn't dramatic; it's one small daily friction going missing. If you never had the issue, the payoff is smaller: sheep yogurt or a wedge of pecorino quietly raises the calcium and protein floor of a meal for its price.
The fine print — when to skip it, and what people get wrong
Goat milk is not hypoallergenic: its casein shares about 90% of cow's structure, and an allergic system reacts to both 80–90% of the time 7. Nor is it lactose-free (4.1g per 100mL vs cow's 4.7), so switching species won't fix a sugar problem 4.

The test misleads if you reject fresh goat milk on flavour (start with sweeter sheep yogurt), swap the wrong product (evening cheese while still drinking cow-milk coffee), or forget the swap raises saturated fat — sheep milk runs about 5g per 100mL against cow's 2 4.
