Eating Speed
You finish a meal in about ten minutes. The hormones that tell your brain you're full take about twenty to arrive. That gap is where the second helping goes, every meal, for years. Slow the same plate to twenty minutes and you eat roughly 10 to 15 percent less without feeling hungrier, flatten the blood-sugar spike behind the afternoon crash, and lose most of the bloat and heartburn that follow a bolted meal. It costs nothing.

Your stomach fills faster than your brain finds out. The gut hormones that signal "stop" (PYY, GLP-1, and CCK) peak 20 to 30 minutes after the first bite, well after the plate is usually empty 1. Bolt a 500-kcal lunch in eight minutes and you finish before that message is sent. Stretch it to twenty-five and the peak lands mid-meal, so you feel full with food still on the plate and stop on your own.

Chewing signals fullness directly too, its own line from mouth to hormones 2. Speed also sets the blood-sugar spike: the same meal eaten fast produces a glucose rise about 30% larger than eaten slow 3.

The effect is small, replicated, and honest. Across pooled trials, slow eaters leave roughly 10 to 15 percent of the meal behind with no more hunger an hour later 4, about 67 kcal less per meal in one pasta study 5. The long-term signal comes from cohorts: fast eaters who also ate until full had about three times the odds of being overweight 6, a gradient that replicates across countries even after adjusting for total calories 7. What's missing is a long Western trial with a weight endpoint: solid mechanism, bounded magnitude.

Twenty minutes is the floor. Finishing sooner means finishing before your brain has the data.

The chew-count version, about thirty chews per bite or double the usual, works by the same route 8. Pick one lever, meal time or chews, and don't track both.

What shifts, and when.

  • Within a week: the post-meal heaviness, bloat, and heartburn thin out, and the "I ate too much" feeling fades as the brain catches the stomach in time.
  • Within a month: the afternoon slump quiets as post-meal sugar swings flatten by about a third 3.
  • Within a year: a few quietly-shed kilos if speed was driving intake; switching from fast to normal pace carried a 0.58 hazard for becoming obese, a four-in-ten drop 9.
  • Over a decade: a several-fold lower rate of metabolic syndrome in slow versus fast eaters 10.
The fine print β€” when to skip it, and what people get wrong

Chewing burns almost nothing: about 15 kcal of heat 11. The lever is eating 50 to 100 kcal less 5. "Chew 32 times" is folklore; any higher count works. Slow eating is one bounded lever, no cure.

Deadline lunches revert the habit; a short sit-down break beats willpower. Soft food (yoghurt, smoothies, purΓ©es) bypasses the chewing lever, so pick structured meals. For the already overweight the acute boost is blunted 12, though the long-term lever still pays.

Skip any timing, counting, or chew-tracking ritual if you have a history of restrictive or obsessive-compulsive eating; it can feed the disorder. Reverse it if the current problem is undereating (recovery, frailty, appetite loss), where you want fullness louder.
