It's close to olive oil, chemically. About 70 percent oleic acid, the same monounsaturated fat that gives olive oil its reputation 1. That one fact drives everything else.
It carries carotenoids into your blood. Eat colorful vegetables dry and you absorb a fraction of the lutein and beta-carotene in them; add fat and you absorb several times more. Dressing a salad with avocado raised lutein sevenfold and beta-carotene more than twofold 2, and the oil alone lifted carotene absorption from carrots and tomato six to eightfold 3.
It holds up at high heat. Heated to searing-pan temperatures, refined avocado oil ranked among the most stable oils tested, while seed oils degraded faster 4.
The cholesterol claim has a catch: avocado oil lowers LDL only when it replaces saturated fat, about 1.6 mg/dL per one percent of calories swapped 5. Poured on top of an unchanged diet it does almost nothing; a trial of 1,008 adults eating an avocado a day moved lipids meaningfully in neither direction 6. The swap is the lever.
Buy for the brand's behavior, not the label tier. The green tint and the words "extra virgin" tell you nothing here.
Nothing to feel, and that's honest. Within weeks there's no energy lift, no clarity, no visible change. The wins are structural: the hot pan stops forcing a choice between saturated fat and seed oil that smells off when it breaks down, and the vegetables you already eat start delivering more of their carotenoids into your blood, which over years shows up as higher serum lutein and beta-carotene 2. It's a quiet upgrade you set once.
Extra-virgin olive oil is the close cousin with a stronger outcomes record: the PREDIMED trial cut major cardiovascular events by about 30 percent over five years 7, and its supply chain is regulated. For ordinary cooking it's the safer pick. Avocado oil's real edge over it is the hot-pan slot.
The fine print โ when to skip it, and what people get wrong
"It's a great source of lutein." No; a tablespoon has far less than a cup of spinach. It's a vehicle for absorbing carotenoids, not a source of them. "High smoke point means healthier." Necessary but not sufficient; extra-virgin olive oil resists oxidation comparably at normal heat 4.
Grabbing whichever bottle is on the shelf fails four times in five 8. Adding instead of replacing gives you 120 calories and no lipid change. Avocado oil on toast does nothing for carotenoids; it needs the vegetables in the same meal. A bottle in a sunny kitchen oxidizes within months.
