Fennel carries anethole, which relaxes the gut muscle that cramps when you bloat; it eases bloating and pain in IBS, and it is why people chew fennel seed after a heavy meal 4.
Asparagus delivers about two-thirds of a day's folate per cooked cup, and its fructans reach the colon intact and feed the bacteria you want fed 5, 6.
Rhubarb is the weakest for evidence: mostly fibre and potassium, with stilbene chemistry that hasn't been tested as food 7. It earns its place as another vegetable in the rotation.

The fine print — when to skip it, and what people get wrong
Made a calcium-oxalate kidney stone? Drop rhubarb: a half-cup carries about 540 mg of oxalate, spinach's class 12; keep the other three. Rhubarb leaves are toxic for everyone, so eat only the stalk. On warfarin, hold asparagus steady week to week. With birch/mugwort-pollen allergy, cook celery rather than eating it raw.
Celery is low-calorie, not negative-calorie: digestion never burns more than the food holds 8. Celery juice cures nothing the whole vegetable doesn't; the fibre-stripped miracle claims have zero trial support 2. And peeling celery strings throws out the fibre you came for.
The habit dies in the crisper drawer, not from lost willpower: asparagus and fennel rot in a week, so buy them to cook that week. The other trap is garnish dosing, where one spear or two celery sticks is a tenth of a serving and gives a tenth of the effect.

Celery seed extract has a positive RCT signal at 1.34 g/day (Shayani Rad 2022) and a 2025 meta-analysis confirming a small but consistent BP effect (Sergi 2024); fennel essential oil has IBS-symptom trial support (Portincasa 2016); asparagus fructans are clearly prebiotic at typical doses (Rodríguez-Arcos 2023). Broader category signal rides on adjacent literatures: total-vegetable mortality (Aune 2017), flavonoid mortality (Liu 2017, Bondonno 2019), fibre mortality (Reynolds 2019). No cohort dose-response targets the stalk/stem subcategory specifically.
Felt within weeks: a few mmHg BP drop in mild hypertensives from regular celery via apigenin and 3-n-butylphthalide (Shayani Rad 2022, Sergi 2024 meta), measurable IBS / bloating reduction from fennel (Portincasa 2016), and a 100–250 kcal/day spontaneous-intake reduction from low-energy-density vegetable sides (Rolls 2009).
Real but additive: inherited share of the vegetable-mortality dose-response (Aune 2017, ~13% per 200 g/day), flavonoid-mortality cohorts (Liu 2017, Bondonno 2019, ~14–17% top vs bottom quintile), and the fibre threshold (Reynolds 2019, 15–30% at 25–29 g/day). No category-specific cohort signal exists; the contribution is part of the broader vegetable / flavonoid / fibre gradient.
Modest contribution via the low-energy-density displacement effect (Rolls 2009 preload work) and the flavonoid/fibre route to slower visible aging through inflammation control and weight stability. Not a dedicated beauty intervention — the contribution is the kind that shows up in aggregate Mediterranean-pattern cohorts, not in skin trials.
Asparagus delivers ~268 µg DFE folate per cooked cup (~67% RDA), one of the densest natural folate sources. A folate-deficient eater feels the afternoon dip ease as homocysteine clears; a folate-sufficient eater feels almost nothing.
