Organs are where the body keeps its stores. The liver is the warehouse for vitamin A, copper, iron, and B12. A slice is a packed pantry; muscle meat is the building, not the pantry.
A 100-gram serving of beef liver carries roughly 5,000 micrograms of vitamin A (five days' target), 59 micrograms of B12 (twenty-five days' worth), 14 milligrams of copper, iron in the heme form that absorbs three to five times better than spinach's, and a third of a day's choline 1, 2. Heart is the densest food source of CoQ10 3.
Most adults aren't badly short on one nutrient. They're quietly short on three or four. About nine in ten Americans eat less choline than the target 4. One in five younger women is under the iron RDA. After sixty, fewer people pull enough B12 from ordinary meat, as stomach acid drops and food-bound B12 needs acid to release 5. You don't feel this as an illness. You feel it as the afternoon crash and the thinning hair. A multivitamin nudges the labs; a weekly piece of liver moves them, because the whole stack lands at once.
Treat liver as a weekly vitamin that happens to be food. Everything else, eat freely.
Can't face the food at all? Freeze-dried liver capsules (3–6 grams a day) deliver most of the same micronutrients — worse value than fresh liver, better than a multivitamin.
How much you feel depends on how depleted you walked in. Full stores just hold steady; a real gap closes over months.
- Weeks one to four: little for most people, since you're refilling stores. Iron-deficient women are the exception, often noticing afternoon energy hold past three o'clock 2.
- Months two to three: the clearest payoff if you had a real gap — faster recovery, steadier mood on restored B12 5, sharper thinking in older adults who'd gone marginal.
- Months six to twelve: skin that looks less tired, hair filling in, warmer winter hands. Then a ceiling: it holds the gains, then plateaus.
The fine print — when to skip it, and what people get wrong
Screen first if any of these fit. Pregnant: no liver — one portion blows past the 3,000 µg/day first-trimester vitamin A limit; heart, kidney, tongue are fine 6, 7. Family iron-overload disease: get tested first 8. Active gout: highest-purine food, 41% higher risk in heavy eaters 9.
"Liver stores toxins." It processes them out through bile and urine; lead and cadmium lodge in bone and fat, not liver. "More is better." Daily liver drifts into vitamin A toxicity 10; weekly sits well below the ceiling.
Starting too big — a plate of plain fried liver guarantees no second try; go blended-grind first. Going daily passes the vitamin A limit within a week. Raw cubes add infection risk for no real gain; the nutrients survive a hot pan.

Organ Meats — Liver, Heart, and Kidney
Beef liver $3–6/lb in US retail, roughly 50× cheaper per microgram of vitamin A than multivitamins, often free with quarter-cow direct-from-farm orders. One of the cheapest nutrient-dense foods per gram of micronutrient delivered.
Acquisition friction (most supermarkets don't stock organ meats — independent butchers or ethnic grocery required) plus preparation learning curve plus palatability barrier. The blended-grind workaround drops effort substantially after the first month.
Within weeks, deficient subgroups (sub-clinical iron deficiency in menstruating women, marginal B12 in older adults, ~90% of US adults below choline AI per Wallace 2018) report measurable functional improvements. Modest in fully replete subjects.
Clear energy lift in iron-deficient subjects — heme iron ~25–30% bioavailable vs ~2–10% for non-heme (Melse-Boonstra 2020) — within 4–8 weeks of weekly liver. B12 repletion adds in older adults with food-bound malabsorption.
USDA composition data and per-nutrient RCTs (B12, iron, choline, retinol) are robust; clinical-endpoint trials of organ-meat consumption as such are absent. Vitamin A teratogenicity ceiling well-replicated since Rothman et al. 1995. Solid for the nutrient-density claim, weaker for clinical-outcome claims.
Sustained micronutrient repletion supports skin, hair, and nail integrity over months. Collagen synthesis depends on copper, iron, and B-vitamins all concentrated in liver. Slow, real, not transformative.
Indirect longevity effect via repletion of multiple underconsumed micronutrients (B12, choline, retinol cofactors, copper); offset by heme-iron's IARC 2A classification (Bouvard et al. 2015). Net positive but bounded; not in the longevity heavyweight tier.
