A whole almond keeps about half its fat locked inside intact cell walls, and enough survive chewing that recognisable fragments pass through undigested with the lipid still inside. Roasted whole almonds deliver about 19% fewer calories than the label claims; raw, 25% fewer 1, 2. Grind them and the walls rupture, the fat floods out, and the count becomes accurate to the gram. The same 30 g runs about 50 absorbed calories whole and about 195 as butter.
What the butter does keep is most of the point. It flattens the blood-sugar spike from whatever carbohydrate you spread it on 3, and across 61 feeding trials, ground forms dropped cholesterol, LDL, and apoB about as well as whole nuts, dose-dependent up to 60 g a day 4. Two tablespoons of peanut butter carry roughly 7 g of protein and 14% of a day's magnesium.
The longevity case, though, is built on whole nuts. A daily handful tracked with about 20% lower all-cause mortality across 100,000-plus adults 5, 6, and 30 g of mixed nuts cut major cardiovascular events by roughly 28% in PREDIMED 7. In one large cohort, whole peanuts cut mortality and peanut butter did not 8 — most likely because the usual jar is a sugared spread on white bread that cancels the benefit.
Almost all the work happens at the store, before the food reaches your table.
The strongest alternative is the whole nut, whenever chewing isn't the problem: more satiety per calorie, the energy discount, and blood sugar it keeps blunting into the next meal 9. Save the butter for toast, smoothies, or feeding a toddler the same minerals without the chewing. Peanut is cheapest and most-studied; tahini brings the most calcium and suits a peanut-allergic house.
The fine print — when to skip it, and what people get wrong
"Nut butter is the same as eating nuts." Same nutrients, different food: grinding erases the calorie discount, so 30 g runs ~50 calories whole and ~195 as butter 1. "The floating oil means it's spoiled." No — it's the nut's own oil; stir and refrigerate.

Nut and Seed Butters
Two-ingredient nut/seed butter runs $5-$15 per jar; a tablespoon-a-day habit is roughly $30-$80 a year, well inside trivial territory.
One-time effort: read the ingredient list and pick a product. Ongoing effort: stir the oil layer, refrigerate, portion by tablespoon rather than spoon-feel.
Strong RCT-level lipid evidence (Del Gobbo 2015 meta of 61 trials; Berryman 2015) and consistent large prospective cohorts (Bao 2013, Aune 2016) for the underlying nut category; PREDIMED (Estruch 2018) provides RCT-grade CV outcome data. Butter-form-specific RCTs are thinner but mechanism-consistent (Mori 2011, Gebauer 2016).
Postprandial glucose blunting at the meal of co-ingestion (Mori 2011, Josse 2007) and within-meal satiety vs competing spreads are real and reproducible. Day-to-day quality-of-life impact is modest — a small but felt difference for readers who replace sugary spreads or use it to anchor carb-heavy meals.
Whole-nut intake at ~28 g/day is associated with ~20% lower all-cause mortality (Aune 2016, Bao 2013) and PREDIMED showed ~28% CV-event reduction (Estruch 2018).
