The coating fails the way real kitchens run. An empty pan on a high burner crosses 500°F in two or three minutes, and by 660°F the coating breaks into gases that include a pulmonary toxin 1. Breathing the fumes causes a flu-like illness that lasts a day or two. Scratch the coating with a metal spatula and one crack sheds about 9,100 plastic particles into your food 2.
The chronic worry is PFAS in your blood. Independent studies of a West Virginia community that drank PFOA-tainted water found probable links to kidney cancer, testicular cancer, thyroid disease, and high cholesterol 3. The highest-exposed roughly doubled their kidney-cancer risk, and the cholesterol and immune effects show up at exposures the rest of us have 4. Doubling a child's blood PFAS roughly halved their vaccine antibody response 5.
Your pan is a small slice of this. Less than your drinking water, less than grease-proof takeout paper 6. But PFOA takes two to four years to halve in your blood, so every source you drop is one less brick in a stack you can't take down later 7. The pan is the slice you can change in an afternoon.
Don't rip out your kitchen today. Stop replacing non-stick when it dies, and buy the swap once.
The upside is mostly quiet, and it arrives on a timeline.
- Week one: the flu-from-the-pan risk is gone, and if you keep a bird, the background worry goes with it 1.
- Month one: the technique clicks. You preheat without thinking, eggs come off the carbon steel, and there's no peeling coating to feel guilty about.
- Year five: you still own the same pans. The non-stick you'd have replaced three times, you didn't.
The fine print — when to skip it, and what people get wrong
If a bird lives in your home, don't use PTFE cookware at all: an overheated pan can kill a parrot, canary, or chicken in minutes 1. Pregnancy and breastfeeding sharpen the case, since PFAS cross the placenta and concentrate in milk 8.
"PFOA-free" is not "PFAS-free": GenX, the replacement for the PFOA phased out in 2015, carries a stricter safe-dose limit, and the PTFE coating is itself a PFAS 9. "My pan never gets that hot" is also wrong — empty on high, it hits 500°F in two and a half minutes 1.
The same moves go wrong every time: an empty pan left preheating on high, a metal spatula that scratches it, a scratched pan kept because food still comes off, and a range hood that recirculates instead of venting outdoors.

Non-Stick Cookware (PTFE/Teflon)
One-time replacement: a multi-ply stainless skillet runs $60–$150, a cast-iron skillet $25–$60; lifetime cost is lower than the $30–$120-every-3–5-years PTFE replacement cycle.
Mild lifestyle shift: stainless requires preheat-and-fat technique, cast iron needs periodic seasoning and hand-drying. Real adjustment for a cook used to PTFE's tolerance, but stabilises within weeks.
PFAS health-effects literature is large and consistent: C8 Science Panel probable-link findings (Steenland et al. 2020), NASEM 2022 clinical guidance, Grandjean Faroe Islands vaccine cohort. Cookware-specific exposure contribution and damaged-coating particulate ingestion are less well quantified, which holds this short of a 5.
PFAS body burden is associated with kidney cancer, testicular cancer, hypercholesterolemia, and immune suppression (C8 Panel 2012; Steenland et al. 2020; NASEM 2022), but cookware is a small share of total PFAS intake — drinking water and grease-proof packaging dominate (ATSDR 2024). Switching delivers a modest additive reduction in lifetime exposure rather than a meaningful hazard-ratio shift.
Removing the cookware eliminates an acute risk most users never trigger (polymer fume fever from overheated empty pans — 267 U.S. poison-control cases in 2023) but produces no felt weekly wellness change otherwise. Acute risk is real but rare; chronic burden moves on a multi-year timescale.
