Wood is not the dirty option. Seed a wood board with salmonella, listeria, and the dangerous E. coli, and capillary action pulls the bacteria into the grain, where they're almost never recoverable from the surface again; by morning most are dead 1. A used plastic board does the opposite: the bacteria multiply overnight in the scarred surface 2. Oak, walnut, pine, and larch all knock counts down faster than plastic holds them 3.
The old rule had no evidence behind it. Plastic looked smoother, so people assumed it was cleaner; asked for proof, the USDA had none 4. Guidance is now material-neutral. The real lever is never letting raw-chicken juice and salad share a surface, whatever the board's made of 4.
Four materials work; the rest are noise. End-grain hardwood (maple, walnut) is the best prep surface: the fibres stand up like brush bristles and part around the blade, so knives stay sharp and cut marks close up. Edge-grain hardwood is the cheaper, lighter version and the right first board for most cooks. Plastic (HDPE) is right for one job: the raw-meat board you bleach and eventually throw out. Composite (Epicurean, Sani-Tuff rubber) gives wood-level knife protection, no oiling.
This barely touches your week; it decides ten years. A $200 knife used daily on a glass board is dull in a month and ruined in a year; on end-grain maple the same knife stays usable for a year between sharpenings. And every chop on a plastic board flicks tiny plastic fragments into your food, tens of millions of particles a year for a daily board 5. Whether they matter biologically is unsettled. The wood board takes the bet off the table.

The fine print — when to skip it, and what people get wrong
Avoid outright: glass, ceramic, marble, stone, stainless steel. All are harder than knife steel, so every chop rolls the edge. For a chemo, transplant, or newborn household, add a third plastic board for cooked meat, dishwashered every cycle.
Bamboo isn't a sustainable hardwood; it's grass glued into a board. A formaldehyde-free adhesive (published by the brand) is fine, a $12 unknown import is a gamble. "Antibacterial" plastic doesn't help and some treatments leach; skip it.
Three mistakes eat the whole benefit: one board for everything, storing it damp and flat (wood cracks, plastic grows a film), and refusing to retire a grey, deep-grooved board. Never dishwasher a wood board; it warps and splits.

Cutting Board Material
A good hard-maple end-grain board runs $80–200 once and lasts a decade plus; a plastic board $10–20; mineral oil and beeswax conditioning <$15/year. Up-front spend is real but amortized cost is trivial.
Hand-wash and stand-dry after each use; wood boards need oiling every 1–3 months. A few minutes a day, ~5 minutes a quarter for conditioning.
Foundational comparative microbiology (Ak, Cliver & Kaspar 1994; Cliver 2006) plus independent replications (Schönwälder et al. 2002; Welker et al. 2003) and a recent microplastic-shedding study (Yadav et al. 2023). No outbreak-level epidemiology linking board material to food-poisoning rates; mechanism solid, real-world endpoints absent.
The cross-contamination lever from cutting-board material is real but small once raw-meat / produce separation is in place; bacterial-transfer differences between wood and used scarred plastic are measurable in lab assays (Ak, Cliver & Kaspar 1994) but don't translate into a felt change in daily wellbeing.
Two indirect mortality contributions: marginally reduced foodborne-illness risk on the right board + use combo, and possible reduction in chronic microplastic ingestion exposure from wood vs. plastic (Yadav et al. 2023). Both effects small at the population level and contested in long-term toxicology.
