Culinary Mushrooms
A supermarket mushroom makes its own vitamin D in sunlight, and it's the only real dietary source of ergothioneine, a compound your body has a dedicated transporter for and quietly stockpiles for decades. Here's what you didn't know you didn't know: regular mushroom eaters show about a third less cancer in the cohort data, breast most of all Ba et al. 2021. You won't feel a thing. For a couple of dollars a week, it's one of the cheapest food hedges that holds up.

Ergothioneine is the reason to care. Mushrooms are essentially the only meaningful source, your body has a protein built to concentrate it in your liver, brain, and the lens of your eye, and it accumulates rather than turning over, so your blood level at sixty tracks what you ate in your forties 1. It has been argued to deserve the name "longevity vitamin" 2.

Beta-glucans are the fungal cell-wall sugars your immune cells latch onto — chemically distinct from the oat kind, and the reason mushrooms poke at immunity while oats mostly bind cholesterol 3.

Vitamin D appears only after ultraviolet light hits the mushroom. Same reaction as in your skin, different starting compound. Sun-exposed or commercially UV-pulsed mushrooms carry 400 to 800 IU per serving; a mushroom grown indoors under fluorescent light, which is most of the bin, carries essentially none 4.

The pooled cohort data, 17 studies and about 19,500 cancer cases, put the heaviest mushroom eaters at 34% lower overall cancer risk, strongest at breast. The curve climbs steeply through the first 18 grams a day, two servings a week, then flattens 5. It's observational, so the true mushroom-specific effect is probably smaller than the headline. It's unlikely to be zero.

The immune shift is quick and measurable: a daily shiitake serving for four weeks raised secretory IgA and lowered the standard inflammation marker 6. The cognitive signal is one Singapore study, where elders eating more than two servings a week had half the rate of mild cognitive impairment 7. A real signal that the West hasn't yet replicated.

The whole habit is two servings a week, cooked.

Almost all of the payoff is invisible. That's the honest framing for anything that trims long-arc risk by a few percent.

  • First month: nothing you can feel. In the lab, your immune and inflammation markers move on a daily serving 6. You won't perceive it.
  • A year in: blood ergothioneine climbs toward the Mediterranean range. Nobody at your table notices.
  • Five to ten years: you're in the population band that shows the lower cancer risk. You'll never know which cancer this hedged against.
  • Sixties onward: in the one large study, regular eaters had half the rate of mild cognitive impairment. Plausible, not proven.
The fine print — when to skip it, and what people get wrong

Never forage without a trained guide — death-cap species fool experienced pickers and the liver damage is irreversible. Cook shiitake through; raw or undercooked, they occasionally trigger a striped rash a day later. Gout: mushrooms are moderately high in purines, so occasional not daily if flares track high-purine meals.

"All mushrooms have vitamin D": false; the indoor bin has essentially none without the UV step 4. "Reishi and lion's mane are medicinal so my buttons are too": those are different compounds; your buttons share the ergothioneine and beta-glucan class only. "Supplements get the same thing": beta-glucan capsules miss the ergothioneine, the vitamin D, and the meat you'd otherwise displace 8.
