The active molecule is sulforaphane, and the raw vegetable doesn't contain it. A storage compound and the enzyme that unlocks it sit in separate compartments; cutting or chewing breaks the walls and they meet. Sulforaphane forms in seconds, then nudges a switch called Nrf2 that turns up the liver's phase-II enzymes, the crew that tags carcinogens and metabolic waste so the kidneys can flush them 1. A second compound shifts estrogen toward its less-proliferative form, the arm behind the hormone-cancer signal 2.
This is one of the cleaner stories in nutrition. When adults in a polluted region drank a broccoli-sprout drink daily, the benzene leaving their bodies in urine rose 61%, from day one 3. The top fifth of intake in a 134,796-person cohort had 22% lower total mortality and 31% lower heart-disease mortality 4. Colorectal cancer risk runs about 18% lower at the high end 5, and an umbrella review across eight cancers lands the risks in the 0.75–0.90 range 6. Women eating a steamed cup a day had 46% lower odds of heavy aortic calcification 7.
Aim for a small cup a day, three to five days a week, about 30–45 g: a quarter cup of steamed broccoli or half a cup of cabbage.
Supplements are a coin flip: most drop the enzyme, so conversion falls to gut bacteria that vary tenfold person to person 9.
The pace is honest: weeks, years, decades.
- Weeks: inflammation drops (CRP fell about 20% in one trial 10) and systolic pressure eases about 2.5 mmHg 11. You won't feel either.
- Years: the carotid arteries stay thinner than the cohort average 12; the aorta lays down calcium slower.
- Decades: the cancer that shows up in someone else's screening, not yours, and the 22% mortality gap that reads as still being at the reunion 4.
The fine print — when to skip it, and what people get wrong
"Kale wrecks your thyroid." The loudest myth here; blood levels from normal intake run 10–100x below what would matter 13, and a feeding trial saw no thyroid change 14.
"Raw is better." Backwards: light steaming keeps the enzyme and lets you eat a useful amount. Only long boiling destroys the chemistry.
On warfarin: don't avoid these, just eat a steady amount, since the vitamin K they carry is what your INR is calibrated against. The newer anticoagulants (apixaban, rivaroxaban, dabigatran) have no such interaction.
You boil them grey, losing enzyme and precursor. You eat them once a week, when the signal wants regular small doses. You overdo raw kale and pay in gas; cook it longer or ferment it.

Standard grocery item; a daily ~$1–2 portion of broccoli, cabbage, or kale puts annual cost well under $500 even at premium pricing.
Buying and preparing them three to five times a week; the only optimization that matters (chop, rest 40 min, light steam) is a one-time habit shift.
Mechanism cleanly characterised (Zhang 1992 onward; Keap1/Nrf2 well-established). Observational evidence consistent across multiple large cohorts and dozens of cancer-site meta-analyses. RCT evidence for hard endpoints is missing, but biomarker trials (Egner 2014) close the proximal mechanism in humans. WCRF/AICR 2018 rates the cancer association at probable; the cardiovascular and inflammation signals add independent support.
Shanghai cohort (n=134,796): 22% lower total mortality, 31% lower CVD mortality in highest vs lowest cruciferous-intake quintile (Zhang 2011). Replicated in Japanese (Mori 2019) and Aune's 2017 pooled dose-response. Cancer signal across colorectal, gastric, bladder, lung, breast in meta-analyses (Wu 2013; Aggarwal 2024). Meaningful and consistent, but cohort-only; WCRF rates the evidence at probable, not convincing.
Cumulative lower oxidative-stress and lower-glycation burden via Nrf2/phase II detoxification, plus the cardiovascular-mediated effects on skin perfusion (Blekkenhorst 2018, 2020). Not a primary aesthetic driver — the contribution is real but slow and indirect.
Modest but measurable: hs-CRP −20% at 4 weeks of broccoli-sprout powder in T2D patients (Bahadoran 2012); 24-hour ambulatory systolic BP −2.5 mmHg in 2 weeks of cruciferous-rich diet vs root vegetables (Connolly 2024). Below the felt-experience threshold for most readers, but biomarker-positive.
